Grilled Sausages with Spinach

This Italian recipe comes from an American family we knew who had lived in Italy for five years. This dish has been a hit with adults and kids alike.
- 2 bunches spinach (about 1.5 lbs total)
- 12 or so breakfast type brown & serve sausages (check labels)
- 2 TBSP butter
- 2 TBSP olive oil
- 1 onion, slivered
- 1 clove garlic, pressed
- 1/4 tsp dry basil
- 1 tomato, peeled and slivered
- 1/4 cup dry white wine
- 1/2 tsp salt
- 1/8 tsp white pepper
- 1/8 tsp ground nutmeg
Clean spinach and remove stems. Set aside for later. Cook sausages as you wish: on grill, or brown in pan, or broil in oven.
Heat oil and butter in a large frying pan over medium heat. When butter is melted, add onion and cook until soft and golden. Mix in garlic, basil, tomato, wine, salt, nutmeg and pepper. Cook until the tomato mixture is thick, about 8-10 minutes. Add spinach and continue cooking until spinach is just wilted and combined with tomato mixture. You may have to do it in batches if all the spinach doesn’t fit at once.
Serve with rice and the well-cooked sausages. The perfect bite is all three things in one morsel. Buon appetito!
